Why 100℃ water is the touchstone of Fuding white tea?
Whether the white tea is good depends on whether it is sweet or not. If it is sweet, it is good white tea, and if it is not sweet, it is bad white tea. We feel that 100° water is the touchstone of white tea, because good white tea can only be in its best state when it is soaked in water at 100℃. We have compared white tea brewed at 90°C and low temperature, and found that: when brewed with hot water at 100°C, the taste of white tea will be more mellow and strong.
